Garlic Tomato Dip
3 tomatoes, diced
1/2 onion, diced
1/4 C. tomato paste
2 T. extra virgin olive oil
1 tsp. granulated sugar
1 T. dried oregano
3 garlic cloves
1 thin red chili
1 T. chopped cilantro
Salt and pepper
Blend all ingredients, except the cilantro, salt and pepper, in a blender
for a few seconds until the ingredients are coarsely chopped. Mix in the
cilantro, salt and pepper before serving.
