Curried Stuffed Eggs.
6 hard boiled eggs
2-3 T mayonnaise
1/4 tsp. red wine vinegar
1 1/2 tsp. mustard
2 tsp. finely chopped red onion
2 tsp. finely chopped jalapeno
1 tsp. curry powder
salt, pepper to taste
garnishing:sweet paprika and chopped chives
Slice eggs in half, lengthwise. Scoop out the yolks into a small bowl. Mash yolks with a fork, then add enough mayonnaise to moisten and combine.
Add dash of vinegar and the mustard, combine well.
Add onion, jalapeno and curry, mixing until smooth and creamy. (Add a bit more mayonnaise if the mixture seems too stiff.)
Taste for seasoning and add salt and pepper to taste.
Spoon the filling into egg halves and sprinkle with paprika, and garnish with chives if desired.
