Italian Bruschetta.
1 loaf of crusty Italian bread
2 tomatoes, finely chopped
2 cloves garlic, finely chopped
1 tablespoon olive oil
2 tablespoons of fresh basil
salt and pepper to taste
1 tablespoon of fresh parsley for garnish
Slice the bread into 3/4 inch pieces.
Combine garlic with olive oil and brush bread with mixture on one side and grill oiled side golden brown.
Combine tomatoes, basil and olive oil/garlic mixture season with salt and pepper to taste.
Spoon tomato mixture over toasted bread slices. Sprinkle parsley over top.
