Fried Turkey Croquetts with Mango Salsa





1 lb ground turkey
1/4 cup fresh cilantro, chopped
1/4 red bell pepper, chopped
1/2 tsp salt
1/4 tsp pepper
1/2 cup flour
2 eggs, beaten
1 cup dry bread crumbs
2 mangos, skinned and diced
1 small red onion, diced
1 tsp cilantro
2 tsp honey
1 tsp vinegar

Mix turkey with 1/4 cup cilantro, red pepper, salt, and pepper. Form into
one-inch balls. Cover and chill for about 30 minutes. Dip balls in flour,
then in egg batter, then roll in bread crumbs. To prepare the mango salsa,
toss the mango with the red onion, 1 tsp cilantro, honey, and vinegar. Cover
and set aside. Deep fry croquettes until the inside is no longer pink and
the outside is golden brown (internal temperature: 165 degrees F). Serve
warm with mango salsa.
