Curried Nuts
500 g Mixed Nuts
1 Egg white
2 tablespoons Curry Powder
1 teaspoons Cumin
Instructions
Preheat the oven to slow 300F (150C/Gas2) Spread the nuts in a single
layer on a baking tray and roast for 10 minutes.
Whisk the egg white until frothy, then add nuts, curry powder, cumin
and 1 teaspoon salt. Toss together and return to the oven for a
further 10 - 15 minutes, then allow to cool.
Makes 4 1/2 cups
