Tomato Pesto Dip
3 cloves garlic, minced
1 tablespoon extra-virgin olive oil
1 oz. dried tomatoes (pkg), crumbled
1/2 cup water
2 tablespoons fresh basil, chopped
or 1/2 teaspoon dried basil, crumbled
1 tablespoons white wine, optional
up to 2 tablespoons wine
Sauté garlic in olive oil but do not brown. Turn heat down.
Add tomatoes, water, basil, and wine.
Cover and steam 3-4 minutes.
Place in heat proof bowl and use as a dip.
Also wonderful poured over a small wedge of soft Brie.
Serve with bread slices and slivered vegetables.
