Damson Wine.






3 cl Yeast
12 cl Brandy
2 lbs. Sugar
7 lbs. plums


Spread yeast on a piece of toast.
Slice the plums , place them in a large pot and pour in a gallon of boiling water.
Close tightly and allow to stand for several days, stir occasionally.
Strain out the juice into a seperate pot, add the sugar and brandy plus the yeast on toast.
Seal and allow to ferment.
Strain when ready and store a year before used.
