Creole Sauce
2 Tablespoons Olive Oil
1 Large Onion -- chopped
1 Large Green Pepper -- chopped
3 Stalks Celery -- chopped
1 Cup Sliced Mushrooms
2 Large Tomatoes -- seeded and chopped
1 Bay Leaf
3 Drops Hot Pepper Sauce
Puree tomato wedges in food processor or blender.
Heat oil in 12-inch skillet over medium-high heat. Add onion, green pepper, and celery.
Saute about 5 minutes, or until transparent. Add tomato puree,mushrooms, chopped tomatoes, bay leaf, and hot pepper sauce.
