Fava bean sauce





8 oz fava beans, podded
2 cloves garlic, chopped
6 leaves fresh mint
3 oz fresh Pecorino cheese
2 hard-boiled egg yolks
1/4 cup extra-virgin olive oil
salt and freshly ground black pepper to taste

Chop the beans, garlic, mint, cheese, and egg yolks in a food processor. Add
the oil gradually and mix until smooth and creamy .. Serve with boiled,
baked, or grilled vegetables.
