Bell pepper sauce
3 large bell peppers
2 cloves garlic. finely chopped
3 tablespoons finely chopped parsley
1 medium onion, finely chopped
1 tablespoon sugar
1 tablespoon white wine vinegar
1/4 cup extra-virgin olive oil
salt to taste
Clean the bell peppers, removing the core and seeds. Rinse and chop very
finely .. Combine with the garlic, parsley, and onion and place in a
heavy-bottomed saucepan. Cover with cold water and simmer for 30 minutes ..
Add the sugar, vinegar, and olive oil. Season with salt and cook for another
5-10 minutes, or until the sauce is thick.
