Tomato and butter sauce
3 cloves garlic, finely chopped
1 large onion, finely chopped
1/4 cup butter
1/4 cup extra-virgin olive oil
11/2 lb peeled and chopped fresh or canned tomatoes salt and freshly ground
black pepper to taste
12 fresh basil leaves, torn
Combine the garlic and onion in a skillet with the butter and oil.
Saute over medium heat until the onion is transparent.
Add the tomatoes and season with salt and pepper.
Simmer over medium-low heat for about 25 minutes.
Add the basil just before removing from heat.
